Blueberry Muffins with Streusel Topping

Servings: 12 muffins

Ingredients

  • 5 tbsp butter, melted
  • 3/4 c all purpose flour
  • 1/2 c brown sugar
  • 2 tbsp granulated sugar
  • 1/2 c dry oats
  • 2 c all purpose flour
  • 1/2 c granulated sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1/8 tsp almond extract
  • 2 tbsp butter, melted
  • 1/4 c vegetable oil
  • 1 egg, beaten
  • 1 c buttermilk
  • 2 1/2 c fresh blueberries

Instructions

  • Preheat oven to 400 degrees.
  • Line a muffin tin with paper cups.
  • Mix the first five ingredients together in a small bowl and set aside.
  • In a large bowl, mix together the next five dry ingredients. (flour, sugar, baking powder, baking soda, and salt)
  • Add egg, oil, butter, and extracts to the dry mixture. Do NOT overmix.
  • Gently fold in the blueberries.
  • Spoon muffin mixture into the muffin cups and crumble streusel topping onto the top of each.
  • Bake muffins for approximately 25 minutes, depending upon your oven.
  • Cool for a few minutes and enjoy!
